Ingredients
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil, for frying
1/4 cup honey
1/4 cup Dijon mustard
1 tablespoon mayonnaise
Instructions
In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper. In another bowl, place beaten eggs. In a third bowl, place panko breadcrumbs.
Dredge each chicken piece in flour mixture, then dip in egg, and finally coat with panko, pressing gently to adhere.
Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering (350°F).
Fry nuggets in batches without crowding, about 3-4 minutes per side, until golden brown and cooked through (internal temp 165°F). Drain on paper towels.
For the sauce, whisk together honey, Dijon mustard, and mayonnaise in a small bowl.
