2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp paprika
1/2 tsp garlic powder

4 large potatoes, cut into fries
2 tbsp olive oil

Instructions
Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
Toss potato fries with olive oil and 1/2 tsp salt. Spread in a single layer on one baking sheet. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
Meanwhile, set up a breading station: In a shallow bowl, mix flour, paprika, garlic powder, 1/2 tsp salt, and pepper. In a second bowl, place beaten eggs. In a third bowl, combine panko and Parmesan.
Dredge each chicken piece in flour mixture, then dip in egg, then coat with panko mixture. Place on the second baking sheet.
Spray nuggets lightly with cooking spray. Bake for 12-15 minutes, flipping halfway, until golden and cooked through (internal temp 165°F).
