Ingredients
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
4 large potatoes, cut into fries
2 tbsp olive oil
1/2 cup ketchup
2 tbsp mayonnaise
1 tbsp honey
1 tsp Dijon mustard
1 tsp lemon juice
Instructions
Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a shallow bowl, mix flour, garlic powder, paprika, salt, and pepper. In another bowl, place beaten eggs. In a third bowl, combine panko and Parmesan.
Coat each chicken piece in flour mixture, then dip in egg, then coat with panko mixture. Place on one prepared baking sheet.
In a large bowl, toss potato fries with olive oil and a pinch of salt. Spread in a single layer on the second baking sheet.
Bake nuggets and fries for 15-20 minutes, flipping halfway, until nuggets are golden and cooked through and fries are crispy.
While baking, make dipping sauce: whisk together ketchup, mayonnaise, honey, Dijon mustard, and lemon juice until smooth.
Serve nuggets and fries with dipping sauce on the side.
Tips
For extra crispy fries, soak cut potatoes in cold water for 30 minutes before baking.
Leftover nuggets can be reheated in an air fryer at 350°F for 5 minutes.
