Ingredients
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
2 large eggs, beaten
1 cup panko breadcrumbs
4 large potatoes, cut into fries
Vegetable oil, for frying
Instructions
Place chicken pieces in a bowl. In a separate bowl, mix flour, salt, pepper, paprika, and garlic powder. In another bowl, place beaten eggs. In a third bowl, place panko.
Dredge each chicken piece in seasoned flour, then dip in egg, then coat with panko. Place on a plate.
Heat 2 inches of oil in a deep pot to 350°F (175°C). Fry nuggets in batches for 4-5 minutes until golden and cooked through. Drain on paper towels.
For fries, cut potatoes into thin strips and soak in cold water for 10 minutes. Drain and pat dry.
Fry potatoes in the same oil at 350°F for 3-4 minutes, then remove. Increase oil to 375°F (190°C) and fry again for 2-3 minutes until crispy. Season with salt.
Serve nuggets and fries together with your favorite dipping sauces.
Tips
For extra crispy fries, double fry as directed.
Keep cooked nuggets warm in a 200°F oven while frying the rest.
Serve with ketchup, honey mustard, or barbecue sauce.
