A homemade version of the McDonald's classic, featuring a savory maple-flavored pancake sandwich with a crispy chicken patty.

Ingredients
1 lb ground chicken
1/2 cup panko breadcrumbs
1 large egg
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 cup maple syrup
1/2 cup buttermilk
1 large egg (for pancakes)
2 tbsp melted butter
4 slices American cheese
Instructions
In a bowl, combine ground chicken, panko, 1 egg, salt, pepper, garlic powder, and onion powder. Mix well and shape into 4 patties.
Heat a skillet over medium heat with a little oil. Cook patties for 5-6 minutes per side until golden and cooked through. Set aside.
In a separate bowl, whisk together flour, baking powder, baking soda, and a pinch of salt. In another bowl, mix maple syrup, buttermilk, 1 egg, and melted butter.
Combine wet and dry ingredients until just mixed (batter will be lumpy).
Lightly grease a griddle or non-stick pan over medium heat. Pour about 1/4 cup batter per pancake to make 8 small pancakes (about 3 inches wide). Cook until bubbles form, then flip and cook until golden.
To assemble: Place a slice of cheese on a pancake, top with a chicken patty, then another pancake. Repeat for remaining sandwiches.
Serve immediately.
Tips
To keep pancakes warm while cooking patties, place on a baking sheet in a 200°F oven.
These can be assembled ahead and reheated in a toaster oven.
