1 lb boneless skinless chicken breasts, cut into strips
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
4 large russet potatoes, cut into fries
2 tbsp olive oil
1/2 tsp onion powder

Instructions
Preheat oven to 425°F. Soak cut fries in cold water for 30 minutes, then drain and pat dry.
Toss fries with olive oil, onion powder, salt, and pepper. Spread in a single layer on a baking sheet. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
Meanwhile, set up breading station: flour in one bowl, beaten eggs in second, and panko mixed with paprika, garlic powder, salt, and pepper in third.
Coat chicken strips first in flour, then egg, then panko mixture, pressing to adhere.
Heat 1/2 inch vegetable oil in a large skillet over medium-high heat. Fry chicken fingers in batches for 3-4 minutes per side until golden and cooked through (internal temp 165°F). Drain on paper towels.
