Ingredients
1 lb boneless skinless chicken breasts, cut into strips
1 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
4 large russet potatoes, cut into fries
3 tbsp olive oil
1/2 tsp salt for fries
Cooking spray or oil for frying
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a shallow bowl, mix flour, paprika, garlic powder, 1/2 tsp salt, and pepper. Place beaten eggs in another bowl, and panko in a third.
Dredge each chicken strip in flour, then egg, then panko, pressing to adhere. Place on a plate.
Spread potato fries on the prepared baking sheet, drizzle with olive oil and sprinkle with 1/2 tsp salt. Toss to coat.
Bake fries for 15 minutes, then flip and bake another 10-15 minutes until golden and crispy.
While fries bake, heat 1/2 inch oil in a large skillet over medium-high heat. Fry chicken fingers in batches, 3-4 minutes per side, until golden and cooked through. Drain on paper towels.
Serve chicken fingers and fries together in a basket or on a platter with your favorite dipping sauces.
Tips
For extra crispy chicken, use a wire rack on the baking sheet instead of paper towels.
Serve with ranch dressing, honey mustard, or ketchup.
You can also air-fry the chicken fingers at 400°F for 10-12 minutes, flipping halfway.
