Ingredients
- 1 croissant, split
- 2 oz cooked chicken breast, sliced or shredded
- 1 large egg
- 1 slice American or cheddar cheese
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Heat a small non-stick skillet over medium heat and melt 1/2 tbsp butter.
- Crack the egg into the skillet and cook to your preference (sunny-side up or over-easy). Season with salt and pepper.
- While the egg cooks, place the sliced chicken on the bottom half of the croissant and top with the cheese slice.
- In the same skillet, add the remaining butter and briefly toast the croissant halves cut-side down until lightly golden.
- Assemble the sandwich: place the cooked egg on top of the cheese, then close with the top croissant half. Serve immediately.
Tips
- For extra flavor, add a drizzle of hot sauce or a spoonful of salsa.
- Use leftover rotisserie chicken for convenience.
- If you prefer a runny yolk, cook the egg sunny-side up; for a firmer yolk, cook over-easy or over-hard.
