Ingredients
8 chicken drumsticks
3 tablespoons soy sauce
2 tablespoons honey
2 tablespoons ketchup
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
Optional: sesame seeds and chopped green onions for garnish
Instructions
Prepare the drumsticks: Using a sharp knife, cut around the bone at the narrow end of each drumstick to loosen the skin and meat. Push the meat down towards the thick end to form a ball, exposing the bone. Repeat with all drumsticks.
Make the marinade: In a bowl, whisk together soy sauce, honey, ketchup, olive oil, minced garlic, smoked paprika, black pepper, and salt.
Place the prepared drumsticks in a large resealable bag or bowl. Pour the marinade over them, turning to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Arrange the drumsticks on the rack, meat-side up, and brush with any remaining marinade.
Bake for 30-35 minutes, turning once halfway through, until the internal temperature reaches 165°F (74°C) and the skin is crispy and caramelized.
Optional: Garnish with sesame seeds and chopped green onions before serving.
Tips
For extra crispiness, broil the lollipops for 2-3 minutes at the end of baking.
Serve with ranch dressing or sweet chili sauce for dipping.
To make ahead, marinate the drumsticks and refrigerate until ready to bake.
