Ingredients
2 boneless, skinless chicken breasts (about 1 lb)
1 tablespoon olive oil
Salt and black pepper to taste
4 large flour tortillas (10-inch)
4 cups chopped romaine lettuce
1/2 cup Caesar dressing
1/2 cup grated Parmesan cheese
1 cup croutons
Instructions
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side, until golden and cooked through (internal temperature 165°F). Let rest 5 minutes, then slice into thin strips.
In a large bowl, combine chopped romaine, Caesar dressing, and Parmesan cheese. Toss to coat evenly.
Lay tortillas flat. Divide the dressed lettuce among the tortillas, placing it in the center. Top with sliced chicken and croutons.
Fold in the sides of the tortilla, then roll tightly from the bottom up to form a wrap. Cut in half diagonally and serve immediately.
