Ingredients
4 boneless, skinless chicken thighs
2 cups buttermilk

2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
2 large eggs
1/4 cup melted butter
1 1/2 cups milk

Instructions
In a bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and cayenne. Add chicken thighs, cover, and refrigerate for at least 2 hours or overnight.
In a large bowl, whisk together flour, baking powder, and baking soda. In another bowl, beat eggs, then whisk in melted butter and milk.
Pour the wet ingredients into the dry ingredients and stir until just combined (batter may be slightly lumpy).
Preheat a waffle iron and lightly grease with cooking spray. Pour about 1/2 cup of batter onto the hot iron and cook until golden and crisp. Repeat with remaining batter.
In a deep skillet or Dutch oven, heat about 2 inches of vegetable oil to 350°F (175°C).
