Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
1 cup dill pickle juice
1 cup milk
1 large egg
1 cup all-purpose flour
2 tablespoons powdered sugar
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper (optional)
Peanut oil, for frying
4 soft hamburger buns
2 tablespoons butter, softened
4 slices American cheese
4 leaves green leaf lettuce
8 slices tomato
8 dill pickle chips
Instructions
Place chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Cut each breast in half crosswise to create two pieces. Place in a bowl and cover with pickle juice. Refrigerate for at least 30 minutes (up to 2 hours).
In a shallow dish, whisk together milk and egg. In another shallow dish, combine flour, powdered sugar, paprika, salt, pepper, garlic powder, onion powder, and cayenne if using.
Remove chicken from pickle juice and pat dry. Dip each piece into the egg mixture, then into the flour mixture, pressing firmly to coat. Shake off excess and place on a wire rack.
Heat 1 inch of peanut oil in a deep skillet or Dutch oven to 350°F (175°C). Fry chicken in batches (do not crowd) for 3-4 minutes per side, until golden brown and internal temperature reaches 165°F. Drain on paper towels.
Butter the cut sides of the buns. Toast in a skillet or on a griddle until golden.
Assemble sandwiches: place a slice of cheese on the bottom bun, then a piece of fried chicken, 2 pickle chips, 2 tomato slices, and a lettuce leaf. Top with the other bun half. Serve immediately.
Tips
For extra crunch, double-dip the chicken: after first flour coating, dip back into egg mixture and then flour again.
Use a candy thermometer to maintain oil temperature for even frying.
Serve with waffle fries and a side of Chick-fil-A sauce (mix 1/4 cup mayo, 2 tbsp honey, 1 tbsp yellow mustard, 1 tbsp Dijon mustard, 1 tbsp BBQ sauce, 1 tsp lemon juice).
