Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1 cup cold unsalted butter, cubed
1/2 teaspoon salt
1 large egg yolk
1 teaspoon vanilla extract
1 can (21 oz) cherry pie filling
1/2 cup rolled oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
Instructions
Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving overhang on two sides.
In a large bowl, whisk together flour, granulated sugar, and salt. Cut in cold butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
Add egg yolk and vanilla; mix until dough comes together. Reserve 1 cup of the mixture for topping. Press remaining dough evenly into the bottom of the prepared pan.
Bake crust for 12-15 minutes, until lightly golden. Remove from oven and let cool slightly, about 5 minutes.
Spread cherry pie filling evenly over the crust.
To the reserved crumb mixture, add oats, brown sugar, and cinnamon; mix until combined. Sprinkle evenly over the cherry filling.
Bake for 25-30 minutes, until topping is golden brown and filling is bubbly. Cool completely in pan on a wire rack, then refrigerate for at least 1 hour before cutting into bars.
