4 large russet potatoes, scrubbed and cut into 1/2-inch thick fries
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
1 cup shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon paprika
2 tablespoons chopped fresh parsley
Instructions
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
In a large bowl, toss the potato fries with olive oil, salt, pepper, and garlic powder until evenly coated. Spread in a single layer on the prepared baking sheet.
Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
While fries bake, make the cheese sauce: In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute until bubbly.
Gradually whisk in milk, stirring constantly until the sauce thickens, about 3-4 minutes.
Reduce heat to low, add cheddar and Parmesan cheeses, and stir until melted and smooth. Stir in paprika.
