These homemade cheese curls are a fun, cheesy snack made from a simple choux pastry dough, baked to crispy perfection. They're a healthier twist on the classic store-bought version.

Ingredients
1 cup water
1/2 cup unsalted butter
1/2 teaspoon salt
1 cup all-purpose flour
3 large eggs
1 cup finely grated sharp cheddar cheese
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon paprika
Instructions
Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
Add flour all at once, stirring vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. Cook for 1 minute, stirring constantly.
Remove from heat and let cool for 2 minutes. Add eggs one at a time, beating well after each addition until the dough is smooth and glossy.
Stir in grated cheddar cheese, cayenne (if using), and paprika until well combined.
Transfer dough to a piping bag fitted with a large star tip. Pipe 2-inch long strips onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 20-25 minutes, or until puffed and golden brown. Rotate pans halfway through baking.
Let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Serve at room temperature.

For extra crispy curls, turn off the oven and leave them inside to cool completely.
Store in an airtight container at room temperature for up to 3 days.
Re-crisp in a 300°F oven for 5 minutes if they soften.
