Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and lightly spray with cooking spray.
Set up a breading station: Place flour in a shallow dish. In another dish, beat eggs with milk. In a third dish, combine crushed Cheerios, garlic powder, paprika, salt, and pepper.
Pat chicken or fish dry with paper towels. Season lightly with salt and pepper.
Dredge each piece in flour, shaking off excess. Dip into egg mixture, letting excess drip off. Then coat evenly with Cheerio mixture, pressing gently to adhere.
Place coated pieces on prepared baking sheet. Lightly spray tops with cooking spray or drizzle with melted butter.
Bake until golden and cooked through: chicken about 18-20 minutes (internal temp 165°F), fish about 12-15 minutes (flakes easily).
Let rest 2 minutes before serving.
Tips
For extra crunch, use a food processor to crush Cheerios into fine crumbs.
Serve with honey mustard or ranch dressing for dipping.
Leftovers can be reheated in a toaster oven or air fryer to maintain crispiness.
