Chashu Don is a Japanese rice bowl topped with tender, braised pork belly, often served with a soft-boiled egg and green onions. This recipe simplifies the process while keeping the rich, savory flavor.

Ingredients
1 lb pork belly, cut into 2-inch pieces
1/4 cup soy sauce
1/4 cup mirin
2 tbsp sake
2 tbsp sugar
2 cloves garlic, crushed
1-inch piece ginger, sliced
2 cups water
4 cups cooked Japanese short-grain rice
4 soft-boiled eggs, halved
2 green onions, sliced
Shichimi togarashi (optional)
Instructions
In a pot, combine soy sauce, mirin, sake, sugar, garlic, ginger, and water. Bring to a boil.
Add pork belly pieces, reduce heat to low, and cover with a lid. Simmer for 1.5 to 2 hours, until pork is tender.
Remove pork from liquid and let cool slightly. Slice into 1/4-inch thick pieces.
Strain the braising liquid and return to the pot. Bring to a boil and reduce until slightly thickened, about 5 minutes.
Divide rice among 4 bowls. Arrange sliced chashu on top. Drizzle with reduced sauce.
Top each bowl with half a soft-boiled egg and sprinkle with green onions. Add shichimi togarashi if desired.
Tips
For extra flavor, marinate the pork belly overnight in the braising liquid before cooking.
The chashu can be made ahead and stored in the refrigerator for up to 3 days.
Serve with pickled ginger or a side of steamed vegetables for a complete meal.
