Ingredients
2 slices challah bread (about 1/2 inch thick)
2 tablespoons unsalted butter, softened
2 slices sharp cheddar cheese
2 slices Gruyère cheese
Instructions
Spread one side of each bread slice with softened butter.
Place one slice, buttered side down, in a cold non-stick skillet. Layer with cheddar and Gruyère slices, then top with the second bread slice, buttered side up.
Cook over medium-low heat until the bottom is golden brown and the cheese begins to melt, about 3 minutes.
Carefully flip the sandwich and cook until the second side is golden brown and the cheese is fully melted, about 3 more minutes.
Remove from skillet, let rest for 1 minute, then slice diagonally and serve immediately.
