Ingredients
2 cups water
2 teaspoons loose black tea (or 2 tea bags)
2 cardamom pods, lightly crushed
2 whole cloves
1 small cinnamon stick (or 1/2 teaspoon ground cinnamon)
1 thin slice fresh ginger (about 1/4 inch thick)
1 cup whole milk (or milk of choice)
2 tablespoons sugar (or to taste)
Instructions
In a small saucepan, combine water, cardamom pods, cloves, cinnamon stick, and ginger. Bring to a boil over medium-high heat.
Reduce heat to low, cover, and simmer for 5 minutes to infuse the spices.
Add the black tea, stir, and simmer for another 2-3 minutes until the tea is strong and aromatic.
Stir in the milk and sugar, and bring to a gentle boil. Let it boil for 1-2 minutes, watching carefully to prevent overflow.
Remove from heat. Strain the chai through a fine-mesh sieve into cups or a teapot. Serve hot.
Tips
For a frothier chai, pour the strained tea back and forth between two cups from a height.
Adjust sweetness and spice levels to taste; add a pinch of black pepper for extra heat.
Store leftover chai in the refrigerator for up to 2 days; reheat gently on the stovetop.
