Ingredients
2 ripe but firm pears (such as Bosc or Bartlett)
2 tablespoons unsalted butter
1 tablespoon brown sugar
1/4 teaspoon ground cinnamon
4 slices sourdough bread (or your favorite bread)
4 ounces Brie cheese, sliced
2 tablespoons honey
Fresh thyme leaves for garnish (optional)
Instructions
Core the pears and slice them thinly (about 1/4-inch thick).
In a medium skillet over medium heat, melt 1 tablespoon of the butter. Add the pear slices, brown sugar, and cinnamon. Cook, stirring occasionally, until the pears are softened and caramelized, about 5-7 minutes. Remove from heat.
Spread the remaining 1 tablespoon butter on one side of each bread slice.
Place two bread slices buttered-side down on a clean work surface. Layer each with half of the Brie slices, then half of the caramelized pears. Drizzle with honey and sprinkle with fresh thyme if using. Top with the remaining bread slices, buttered-side up.
Heat a large skillet or griddle over medium heat. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press down gently with a spatula while cooking.
Remove from heat, let cool for a minute, then slice in half and serve warm.
