Ingredients
2 large yellow onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon brown sugar
1 tablespoon balsamic vinegar
1 1/2 pounds ground beef (80/20)
4 slices cheddar cheese
4 hamburger buns, split and toasted
Lettuce, tomato, pickles, ketchup, mustard (optional, for serving)
Instructions
In a large skillet over medium heat, melt butter with olive oil. Add onions, salt, and pepper. Cook, stirring occasionally, for 25-30 minutes until deeply golden and soft.
Stir in brown sugar and balsamic vinegar; cook for 2 more minutes. Remove onions from skillet and set aside.
Divide ground beef into 4 equal portions and shape into patties slightly larger than the buns. Season with salt and pepper.
Heat the same skillet over medium-high heat. Cook patties for 4-5 minutes per side for medium, or to desired doneness. During the last minute, top each patty with a slice of cheese and cover to melt.
Place patties on bun bottoms. Top with caramelized onions and any desired toppings. Close with bun tops and serve immediately.
Tips
For extra flavor, add a splash of Worcestershire sauce to the ground beef before shaping patties.
Caramelized onions can be made ahead and refrigerated for up to 5 days; reheat before using.
