  2. In a medium saucepan, combine sugar and water. Cook over medium heat, stirring occasionally, until sugar dissolves. Brush down any crystals with a wet pastry brush. Continue cooking without stirring until mixture turns a deep amber color, about 8-10 minutes.
  3. Remove from heat. Carefully pour in heavy cream (mixture will bubble vigorously). Stir in butter, vanilla, and salt until smooth. Pour caramel into prepared dish. Let cool at room temperature for 30 minutes, then refrigerate until firm, about 2 hours.
  4. Once caramel is firm, lift from dish using parchment. Cut into 24 small squares. Roll each square into a ball and place on a parchment-lined baking sheet. Freeze for 15 minutes.
  5. In a heatproof bowl over simmering water, melt chocolate with coconut oil, stirring until smooth. Remove from heat.
  6. Using a fork or dipping tool, dip each caramel ball into melted chocolate, coating completely. Tap off excess and place on parchment-lined baking sheet. Repeat with all caramels.
  7. Refrigerate chocolates until set, about 30 minutes. Store in an airtight container in the refrigerator for up to 2 weeks.
