Ingredients
4 cups plain popped popcorn
1/2 cup unsalted butter
1/2 cup packed brown sugar
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
2 cups vanilla pudding (prepared)
1 cup heavy cream
2 tablespoons powdered sugar
Instructions
Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
Place popcorn in a large bowl, removing any unpopped kernels.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil for 4 minutes without stirring.
Remove from heat and quickly stir in baking soda and vanilla extract. The mixture will foam.
Pour caramel over popcorn and stir with a spatula until evenly coated. Spread onto prepared baking sheet.
Bake for 10 minutes, stirring halfway through. Let cool completely, then break into clusters.
In a mixing bowl, whip heavy cream and powdered sugar until stiff peaks form.
To assemble parfait layers: In serving glasses or bowls, layer vanilla pudding, caramel corn, and whipped cream. Repeat layers as desired.
