Ingredients
1 lb beef sirloin, thinly sliced
1 tbsp soy sauce
1 tbsp cornstarch
1 tbsp vegetable oil
1/2 cup pineapple chunks (canned, drained)
1/2 green bell pepper, cut into chunks
1/2 red bell pepper, cut into chunks
1/2 onion, cut into chunks
1/4 cup rice vinegar
1/4 cup ketchup
3 tbsp sugar
2 tbsp water
1 tbsp cornstarch (for sauce)
Vegetable oil for frying
Instructions
In a bowl, combine beef slices with soy sauce and 1 tbsp cornstarch. Marinate for 10 minutes.
In a small bowl, mix rice vinegar, ketchup, sugar, water, and 1 tbsp cornstarch to make the sauce. Set aside.
Heat oil in a wok or large skillet over high heat. Add beef and stir-fry until browned, about 2 minutes. Remove and set aside.
Add a little more oil if needed. Stir-fry onion and bell peppers for 1-2 minutes until slightly tender.
Return beef to the wok. Add pineapple chunks and pour in the sauce. Stir-fry until sauce thickens and coats everything, about 1-2 minutes. Serve immediately.
Tips
For extra crispiness, lightly coat beef in additional cornstarch before frying.
Serve over steamed rice or with noodles.
