Ingredients
1 lb pizza dough, at room temperature
2 tbsp olive oil, divided
4 oz soft goat cheese, crumbled
1/2 cup sun-dried tomatoes in oil, drained and chopped
2 cups fresh arugula
1/4 cup shaved Parmesan cheese
1 tbsp fresh lemon juice
Salt and freshly ground black pepper to taste
Instructions
Preheat oven to 500°F (260°C) with a pizza stone or inverted baking sheet inside for at least 30 minutes.
Divide dough into two balls. On a floured surface, stretch each into a 10-inch round, keeping edges slightly thicker.
Brush each round with 1/2 tbsp olive oil. Spread half of goat cheese and sun-dried tomatoes over each, leaving a 1/2-inch border.
Carefully transfer pizzas to preheated stone or sheet. Bake for 10-12 minutes until crust is golden and cheese is melted.
While pizzas bake, toss arugula with remaining 1 tbsp olive oil, lemon juice, salt, and pepper.
Remove pizzas from oven, top with arugula mixture and shaved Parmesan. Slice and serve immediately.
Tips
For extra flavor, add sliced red onion or prosciutto before baking.
If you don't have a pizza stone, use a preheated heavy baking sheet.
Serve with a crisp white wine like Sauvignon Blanc.
