  4. Add soaked and drained beans and broth. Bring to a boil, then reduce heat to low, cover, and simmer for 1 1/2 to 2 hours, stirring occasionally, until beans are tender.
  5. Return sausage to the pot. Simmer uncovered for 20-30 minutes, stirring occasionally, until beans are creamy and liquid has thickened slightly. Remove bay leaves.
  6. Taste and adjust seasoning with salt and pepper. Serve over rice, garnished with green onions.
