Ingredients
6 oz grissini breadsticks
1 cup finely grated Pecorino Romano cheese
1 tablespoon freshly cracked black pepper
1/2 cup heavy cream
2 tablespoons unsalted butter
1/4 cup pasta water (or water)
Instructions
In a small saucepan, melt butter over medium heat. Add cracked black pepper and cook for 1 minute until fragrant.
Pour in heavy cream and bring to a gentle simmer. Reduce heat to low.
Gradually whisk in grated Pecorino Romano cheese, stirring constantly until melted and smooth. If sauce is too thick, add pasta water a tablespoon at a time until desired consistency is reached.
Transfer sauce to a serving bowl. Serve warm with grissini breadsticks for dipping.
Tips
Use high-quality Pecorino Romano for best flavor.
Adjust black pepper to taste; freshly cracked is essential.
Sauce can be made ahead and gently reheated, adding a splash of water if needed.
