Ingredients
500 g boneless skinless chicken thighs, cut into bite-sized pieces
2 tablespoons butter
1 large onion, finely chopped
3 cloves garlic, minced
1 tablespoon ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon chili powder
1/2 cup tomato puree
1/2 cup heavy cream
Salt to taste
Fresh cilantro for garnish
Instructions
Heat butter in a large skillet over medium heat. Add chicken pieces and cook until golden brown on all sides, about 5-7 minutes. Remove chicken and set aside.
In the same skillet, add onion and cook until soft, about 5 minutes. Add garlic and ginger, cook for 1 minute.
Stir in cumin, coriander, turmeric, and chili powder. Cook for 30 seconds until fragrant.
Add tomato puree and bring to a simmer. Cook for 5 minutes, stirring occasionally.
Return chicken to the skillet. Pour in heavy cream, stir to combine. Season with salt.
Reduce heat to low, cover, and simmer for 15-20 minutes until chicken is cooked through and sauce thickens.
Garnish with fresh cilantro and serve hot with rice or naan.
Tips
For a richer flavor, use ghee instead of butter.
