Ingredients
1 tbsp vegetable oil
1 lb ground beef (80/20)
1 medium onion, diced
3 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 (15 oz) can black beans, drained and rinsed
1 (10 oz) can diced tomatoes with green chilies (like Rotel), undrained
1/2 cup water or beef broth
1 tbsp tomato paste
Instructions
Heat oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned (about 5-6 minutes). Remove excess fat if desired.
Add onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute more.
Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 30 seconds until fragrant.
Add black beans, diced tomatoes, water or broth, and tomato paste. Stir to combine.
Bring to a simmer, then reduce heat to medium-low. Cook for 10-15 minutes, stirring occasionally, until thickened.
Taste and adjust seasoning. Serve warm in burritos with your favorite toppings.
Tips
For a spicier filling, add 1/4 tsp cayenne pepper or use hot diced tomatoes.
