Ingredients
2 large croissants, split and toasted
2 frozen sausage patties (about 2 oz each)
2 large eggs
2 slices American cheese
1 tablespoon butter, divided
Salt and pepper to taste
Instructions
Cook sausage patties in a nonstick skillet over medium heat until browned and cooked through, about 4 minutes per side. Transfer to a plate and keep warm.
In the same skillet, melt 1/2 tablespoon butter over medium-low heat. Crack eggs into the skillet, breaking yolks gently. Cook until whites are set but yolks are still runny, about 2-3 minutes. Season with salt and pepper. Flip carefully and cook 30 seconds more for over-easy, or to desired doneness.
While eggs cook, toast croissant halves in a toaster or under the broiler until lightly golden.
Assemble sandwiches: Place a slice of cheese on bottom half of each croissant, add sausage patty, then egg. Top with remaining croissant half.
Serve immediately.
Tips
For a crispier egg, cook over medium heat without flipping until whites are fully set.
Warm the croissants in the oven at 350°F for 5 minutes if not toasting.
Store leftover components separately and reheat before assembling.
