Ingredients
1 lb boneless skinless chicken breasts
1/2 cup buffalo wing sauce (such as Frank's RedHot)
2 tbsp unsalted butter, melted
4 large flour tortillas (10-inch)
1/2 cup ranch dressing
2 cups shredded lettuce
1 large tomato, diced
1/2 cup crumbled blue cheese (optional)
1/2 cup shredded carrots
1/4 cup chopped green onions
Instructions
Season chicken breasts with salt and pepper. In a skillet over medium-high heat, cook chicken for 5-7 minutes per side until cooked through (internal temp 165°F). Let rest for 5 minutes, then shred or dice.
In a bowl, mix shredded chicken with buffalo wing sauce and melted butter until well coated.
Warm tortillas in a dry skillet or microwave for 10-15 seconds to make pliable.
Spread 2 tablespoons of ranch dressing down the center of each tortilla.
Top with lettuce, tomato, blue cheese (if using), shredded carrots, and green onions.
Divide buffalo chicken mixture evenly among tortillas.
Fold in the sides of the tortilla, then roll tightly from the bottom up to form a wrap. Cut in half diagonally and serve.
Tips
For extra crunch, add sliced celery or cucumber.
Serve with additional ranch or blue cheese dressing for dipping.
Can be made ahead and wrapped in foil; refrigerate up to 24 hours.
