Ingredients
1 cup raw buckwheat groats
2 cups water
1/2 teaspoon salt
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup chopped fresh parsley
1/4 cup chopped fresh dill
1/4 cup chopped red onion
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
1 clove garlic, minced
Salt and pepper to taste
Instructions
Rinse buckwheat groats under cold water. In a saucepan, combine groats, water, and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until tender and water is absorbed. Fluff with a fork and let cool.
In a large bowl, combine cooled buckwheat, cherry tomatoes, cucumber, parsley, dill, and red onion.
In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper. Pour over salad and toss gently to combine.
Adjust seasoning to taste. Serve at room temperature or chilled.
