Ingredients
1/2 cup buckwheat flour
1/2 cup brown rice flour
1/2 teaspoon salt
2 large eggs
1 cup milk (or plant-based milk)
1/4 cup water
2 tablespoons melted butter or oil, plus more for pan
Instructions
In a medium bowl, whisk together buckwheat flour, brown rice flour, and salt.
In a separate bowl, beat eggs, then whisk in milk, water, and melted butter.
Pour the wet ingredients into the dry ingredients and whisk until smooth. Let the batter rest for 5 minutes.
Heat a non-stick skillet or crêpe pan over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of batter into the center of the pan, swirling to spread evenly into a thin circle.
Cook for 1-2 minutes until the edges lift and the bottom is lightly browned. Flip and cook for another 30 seconds to 1 minute.
