Ingredients
8 slices (1/2-inch thick) Italian baguette or ciabatta
3 tablespoons extra-virgin olive oil, divided
1 garlic clove, peeled and halved
4 ripe Roma tomatoes, diced (about 1 1/2 cups)
2 tablespoons fresh basil, thinly sliced
1 teaspoon balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat oven to 400°F (200°C). Arrange bread slices on a baking sheet and brush both sides with 2 tablespoons olive oil. Toast for 5 minutes, flipping halfway, until golden and crisp.
Rub one side of each toast with the cut garlic clove. Set aside.
In a medium bowl, combine diced tomatoes, basil, remaining 1 tablespoon olive oil, balsamic vinegar, salt, and pepper. Toss gently.
Spoon tomato mixture onto each toast, dividing evenly. Serve immediately.
