Ingredients
1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1 pint vanilla ice cream, softened
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
Melt butter in a medium saucepan over low heat. Remove from heat and stir in sugar, eggs, and vanilla until well combined.
Add cocoa powder, flour, salt, and baking powder; stir until just combined. Do not overmix.
Pour batter into prepared pan and spread evenly. Bake for 20-25 minutes, or until a toothpick inserted in center comes out with a few moist crumbs.
Let brownies cool completely in pan on a wire rack. Then freeze for 30 minutes to firm up.
Using parchment overhang, lift brownie block out of pan. Cut into 8 rectangles (4x2).
Place 4 brownie rectangles on a baking sheet. Top each with a generous scoop of softened ice cream (about 1/4 cup). Place remaining brownie rectangles on top and gently press to form sandwiches.
Freeze sandwiches for at least 2 hours until firm. Wrap individually in plastic wrap for longer storage.
Tips
For easier cutting, use a sharp knife and wipe clean between cuts.
Let sandwiches sit at room temperature for 5 minutes before serving for easier biting.
