Ingredients
4 rashers back bacon
4 pork sausages
2 large eggs
1 can (400g) baked beans
2 large tomatoes, halved
200g mushrooms, sliced
2 slices black pudding (optional)
2 slices bread for toasting
2 tbsp butter or oil for frying
Salt and pepper to taste
Instructions
Preheat oven to 200°C/400°F. Place sausages and bacon on a baking tray and cook for 15-20 minutes, turning halfway, until golden and cooked through.
While meat cooks, heat a large frying pan over medium heat. Add a little oil and fry the mushrooms for 3-4 minutes until softened. Remove and keep warm.
In the same pan, place tomato halves cut-side down and cook for 2-3 minutes until lightly charred. Remove and keep warm.
If using black pudding, fry slices in the pan for 2 minutes per side until crispy. Remove and keep warm.
Heat baked beans in a small saucepan over low heat.
Toast the bread and butter it.
In the same frying pan, fry eggs to your liking (sunny-side up or over easy) in a little butter or oil.
Plate everything: sausages, bacon, eggs, beans, tomatoes, mushrooms, black pudding, and toast. Season with salt and pepper.
Tips
For a healthier version, grill the bacon and sausages instead of frying.
Serve with HP Sauce or ketchup on the side.
Fried bread can replace toast: fry bread slices in the pan juices until golden.
