Ingredients
2 cups cold mashed potatoes
2 cups cooked cabbage, chopped
1 cup cooked Brussels sprouts, chopped
1/2 cup cooked carrots, diced
1 small onion, finely chopped
2 tablespoons butter
Salt and pepper to taste
1 tablespoon vegetable oil
Instructions
In a large bowl, combine mashed potatoes, cabbage, Brussels sprouts, carrots, and onion. Season with salt and pepper. Mix well.
Shape the mixture into 4 patties, about 1 inch thick.
In a large non-stick skillet, melt butter with oil over medium-high heat.
Place patties in the skillet and cook for 5-7 minutes per side, until golden brown and crispy.
Serve hot, traditionally with a fried egg on top.
Tips
For extra crispiness, chill the patties for 30 minutes before frying.
Leftover bubble and squeak can be reheated in a dry skillet.
