Ingredients
8 small flour or corn tortillas
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
8 slices bacon
1 cup shredded cheddar or Monterey Jack cheese
1 avocado, sliced
1/2 cup salsa
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Instructions
Cook bacon in a large skillet over medium heat until crisp, about 6-8 minutes. Transfer to paper towels to drain, then crumble.
In a bowl, whisk eggs, milk, salt, and pepper until well combined.
Pour off all but 1 tablespoon bacon drippings from skillet (or use butter). Melt butter over medium heat, then add egg mixture. Cook, stirring gently, until eggs are just set but still moist, about 3-4 minutes. Remove from heat.
Warm tortillas in a dry skillet or microwave until pliable.
Assemble tacos: fill each tortilla with scrambled eggs, crumbled bacon, cheese, avocado slices, and salsa. Garnish with cilantro and serve with lime wedges.
