Ingredients
8 slices thick-cut bacon
4 large eggs
4 slices cheddar cheese
4 English muffins or brioche buns, split
2 tablespoons unsalted butter
1 avocado, sliced
1 cup arugula or mixed greens
1 tomato, sliced
Salt and black pepper to taste
Instructions
Cook bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
Pour off most of the bacon fat, leaving about 1 tablespoon in the skillet. Return to medium heat.
Fry eggs in the hot fat to your liking (sunny-side up or over easy), seasoning with salt and pepper. Cook until whites are set but yolks are still runny, about 3 minutes.
While eggs cook, toast English muffins or buns in a toaster or under the broiler until golden.
Assemble sandwiches: place a slice of cheese on the bottom half of each muffin, top with bacon, avocado slices, tomato, arugula, and a fried egg. Cover with top half.
Arrange sandwiches on a platter and serve immediately.
