Ingredients
1 large egg
1 tablespoon milk or water
1 slice cheese (American, cheddar, or your choice)
1 English muffin or 2 slices bread
1 teaspoon butter or oil
Salt and pepper to taste
Instructions
Split the English muffin and toast it lightly. If using bread, toast the slices.
In a small bowl, whisk the egg with milk or water, salt, and pepper until frothy.
Heat a non-stick skillet over medium heat and add butter or oil. Pour in the egg mixture and let it cook undisturbed until the edges are set, about 1 minute.
Place the cheese slice on top of the egg, then fold the egg in half or into a square shape to fit the bread. Cook for another 30 seconds until cheese melts.
Transfer the egg-cheese patty onto the bottom half of the toasted muffin or bread. Top with the other half and serve immediately.
Tips
Add cooked bacon, sausage, or ham for a heartier sandwich.
For a spicy kick, add a dash of hot sauce or a slice of jalapeño.
Make ahead: Cook the egg patty, let cool, and refrigerate. Reheat in a toaster oven or microwave.
Use a ring mold to shape the egg perfectly round for a uniform sandwich.
