Ingredients
8 large eggs
8 slices bacon
8 breakfast sausages
4 medium potatoes, diced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
4 slices bread (toast)
2 tbsp butter
Fresh parsley for garnish (optional)
Instructions
Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 20-25 minutes until golden and crispy, flipping halfway.
While potatoes roast, cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer to a paper towel-lined plate. Pour off most of the fat, leaving about 1 tbsp.
In the same skillet, cook sausages over medium heat until browned and cooked through, about 10 minutes. Remove and keep warm.
In a non-stick skillet, melt butter over medium-low heat. Crack eggs into the skillet and cook to desired doneness (sunny-side up, over easy, etc.), about 3-4 minutes. Season with salt and pepper.
Toast bread slices and butter them.
Assemble platters: Divide roasted potatoes, bacon, sausages, eggs, and toast among 4 plates. Garnish with parsley if desired. Serve immediately.
Tips
For extra flavor, add a sprinkle of fresh herbs like chives or thyme to the eggs.
You can substitute turkey bacon or chicken sausages for a lighter option.
Leftover roasted potatoes can be reheated in a skillet for a crispy texture.
