Ingredients
4 slices bacon
4 large eggs
2 tablespoons milk
2 tablespoons unsalted butter
2 cups frozen shredded hash browns
2 slices bread
Salt and black pepper to taste
Ketchup or hot sauce for serving (optional)
Instructions
Cook bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain.
In a medium bowl, whisk eggs with milk, salt, and pepper until well combined.
In the same skillet, melt 1 tablespoon butter over medium heat. Add hash browns and cook, stirring occasionally, until golden brown and crispy, about 8-10 minutes. Season with salt and pepper.
Meanwhile, toast bread slices.
In a nonstick skillet, melt remaining 1 tablespoon butter over medium-low heat. Add egg mixture and cook, stirring gently, until eggs are set but still soft, about 3-4 minutes.
Assemble platters: divide hash browns, scrambled eggs, bacon, and toast between two plates. Serve immediately with ketchup or hot sauce if desired.
Tips
For extra crispy hash browns, press them down with a spatula while cooking.
Customize with sausage patties or fresh fruit on the side.
Leftover scrambled eggs can be stored in the fridge for up to 2 days.
