4 large eggs
2 tablespoons milk
Salt and pepper to taste
1 tablespoon butter
4 slices bacon
2 medium potatoes, diced into 1/2-inch cubes
1 tablespoon olive oil
1/2 teaspoon paprika
2 slices bread, toasted
Fresh parsley for garnish (optional)
Instructions
Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, flipping halfway, until golden and tender.
While potatoes roast, cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
In a bowl, whisk eggs with milk, salt, and pepper. In the same skillet, discard all but 1 tablespoon of bacon fat (or use butter). Pour in eggs and cook over medium-low heat, stirring gently, until softly scrambled, about 3-4 minutes.
Toast bread slices. Assemble plates: divide roasted potatoes, scrambled eggs, bacon, and toast between two plates. Garnish with parsley if desired.
Tips
For extra flavor, add shredded cheese to the eggs just before they finish cooking.
Leftover potatoes can be reheated in a skillet for a crispy texture.
