8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
1/2 pound breakfast sausage, casings removed
1/2 cup diced onion
1/2 cup diced bell pepper
1 cup shredded cheddar cheese
Instructions
In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined. Set aside.
Heat a large non-stick skillet over medium-high heat. Add breakfast sausage and cook, breaking it up with a spatula, until browned and cooked through, about 5 minutes. Remove sausage from skillet and set aside.
Reduce heat to medium. Add butter to the skillet, then add onion and bell pepper. Cook, stirring occasionally, until softened, about 3-4 minutes.
Pour the egg mixture into the skillet with the vegetables. Let the eggs cook undisturbed for about 30 seconds, then begin gently stirring with a spatula, scraping the bottom and sides. Continue cooking until eggs are just set but still soft and creamy, about 2-3 minutes.
Return the cooked sausage to the skillet and stir to combine. Sprinkle cheese over the top and let it melt slightly, about 1 minute. Remove from heat.
