Ingredients
1 everything bagel, split
1 breakfast sausage patty (about 2 oz)
1 large egg
1 slice American cheese
1 tablespoon unsalted butter
Salt and black pepper to taste
Instructions
Heat a non-stick skillet over medium heat. Add the sausage patty and cook until browned and cooked through, about 3-4 minutes per side. Transfer to a plate and keep warm.
In the same skillet, melt 1/2 tablespoon butter over medium heat. Crack the egg into the skillet and cook until the white is set but the yolk is still runny, about 2-3 minutes. Season with salt and pepper. Flip if desired for over-easy, about 30 seconds more.
Toast the bagel halves in a toaster or in the skillet cut-side down until golden, about 1-2 minutes.
Assemble the sandwich: Place the cheese on the bottom half of the bagel, top with the sausage patty, then the fried egg. Cover with the top bagel half.
