Ingredients
1 lb boneless skinless chicken breasts, cut into strips
1 cup all-purpose flour
2 large eggs
2 tablespoons milk
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil, for frying
Instructions
Set up a breading station: Place flour in a shallow dish. In another dish, whisk eggs and milk. In a third dish, combine panko, Parmesan, garlic powder, paprika, salt, and pepper.
Pat chicken strips dry with paper towels. Dredge each strip in flour, shaking off excess. Dip into egg mixture, then coat with panko mixture, pressing gently to adhere.
Heat about 1/2 inch of oil in a large skillet over medium-high heat until shimmering (350°F).
Fry chicken tenders in batches, without crowding, for 3-4 minutes per side until golden brown and cooked through (internal temp 165°F). Drain on paper towels.
Serve immediately with your favorite dipping sauce.
Tips
For extra crunch, use panko breadcrumbs instead of regular.
Bake at 400°F for 15-18 minutes for a lighter version, spraying with oil.
