  5. Preheat oven to 400°F. Beat egg with 1 tbsp water and brush over tops of rolls. Bake for 25-30 minutes until golden brown and hollow-sounding when tapped.
  6. Cool completely on a wire rack. To serve, cut a circle in the top of each roll and scoop out the soft interior, leaving a 1/2-inch thick shell. Fill with soup.
