Ingredients
1 1/2 cups wheat bran
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup buttermilk
1/2 cup raisins (optional)
Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together wheat bran, flour, baking soda, and salt.
In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
Beat in egg and vanilla extract until combined.
Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with flour mixture. Mix until just combined. Fold in raisins if using.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
Bake for 10-12 minutes, until edges are golden brown. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
