Ingredients
- 1.5 lbs pork shoulder or chicken thighs, cut into 2-inch pieces
- 2 tablespoons vegetable oil
- 4 cloves garlic, smashed
- 1 inch ginger, sliced
- 1/4 cup soy sauce
- 2 tablespoons dark soy sauce
- 1/4 cup Shaoxing wine or dry sherry
- 2 tablespoons brown sugar
- 1 cup chicken broth
- 2 star anise
- 1 cinnamon stick
- 2 scallions, cut into 2-inch pieces
Instructions
- Heat oil in a heavy pot over medium-high heat. Brown meat in batches, about 4 minutes per side. Set aside.
- Reduce heat to medium. Add garlic and ginger; cook until fragrant, about 30 seconds.
- Return meat to pot. Add soy sauces, wine, sugar, broth, star anise, cinnamon, and scallions. Bring to a boil.
- Cover, reduce heat to low, and simmer for 1.5 hours (pork) or 45 minutes (chicken), until meat is tender.
- Uncover and simmer for 10-15 minutes to thicken sauce if desired. Adjust seasoning.
