Ingredients
2 lbs beef sirloin tips, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
2 tbsp all-purpose flour
1 cup beef broth
1 cup dry red wine (or additional beef broth)
2 tbsp tomato paste
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
2 tbsp chopped fresh parsley for garnish
Instructions
Season beef tips with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Brown beef in batches, about 3-4 minutes per batch, then set aside.
Reduce heat to medium. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Sprinkle flour over onions and stir, cooking for 1 minute. Gradually whisk in beef broth and red wine, scraping up browned bits.
Stir in tomato paste, thyme, and bay leaf. Return beef to pot. Bring to a simmer, then cover and transfer to a preheated 325°F oven.
Braise for 1.5 to 2 hours, until beef is fork-tender. Remove bay leaf. Adjust seasoning with salt and pepper. Garnish with parsley before serving.
